Disney Copy-Cat Felucian Garden Spread

I can bet you’re missing Disney more than usual, especially if you’re like me and taking this year off of your usual Disney trips! I’ve been bringing the magic home as often as I can in any way I can. This got me in the kitchen lately, since Texas is still not doing so well with COVID-19 cases, and low and behold, I’ve been making a whole bunch of Disney recipes!

If you’ve been keeping up with the magic over here, you probably know I chose to eat a vegan diet. On my last trip to Disney World, I was in HEAVEN with all the options available. Naturally, I had to recreate them in my own kitchen and what better time then quarantine! I started with a pretty simple one, the Felcuian Garden Spread from Hollywood Studios, Galaxy’s Edge!

What you’ll need

  • Trader Joe’s Falafel Mix
  • FOR THE HUMMUS
  • 1 15 ounce can of Black beans
  • minced garlic (to your liking)
  • cilantro
  • cumin
  • smoked paprika
  • olive oil
  • lime juice
  • salt & pepper
  • FOR THE CUCUMBER SALAD
  • cucumber
  • tomatos
  • red onion
  • mint
  • 1/4- 1/2 cup of olive oil
  • lime juice
  • salt & pepper

What’s so amazing about this recipe is every part of it is so customizable!

What you’ll do

Mix Trader Joe’s Falafel Mix according to package directions, while it is resting start on the cucumber salad (because it tastes SO much better chilled) all you have to do for that is chop all ingredients and mix together, place in the fridge. Next up you can start making the Black Bean Hummus, all you need to do here is rinse and wash the can of black beans and toss all ingredients in a blender and mix until smooth! Again I left the seasoning without measurements because it’s important to make a dish that appeals to YOU! Serve with warm naan bread!

I have to admit, I made this without fresh herbs because I didn’t want to take the trip to the grocery store. It was still super tasty, but I do recommend using fresh herbs for the cucumber salad!
